Slow Cooker One Pot Chicken Breast RecipeSlow cookers are brilliant for those of us with busy lifestyles. This recipe will allow the cooker to do all the hard work for you and leaves you with wonderful tender chicken, vegetables and it’s own sauce. A warming, rustic dish for those with a hectic schedule.

Ingredients (serves 2):

  • 2 medium chicken breasts
  • 3-4 medium potatoes (5-6 small potatoes)
  • 2 sticks of celery
  • 2 medium carrots
  • 1 large onion
  • 1 head of garlic
  • 1 lemon
  • 250ml dry white wine
  • 2 bay leaves
  • 1 sprig of thyme
  • Salt and pepper to taste
  • 1 tsp sunflower oil
  • 2 tbsp double (heavy) cream (optional)


1. Season the chicken breasts with salt and pepper.

2. Brown the chicken breasts, in sunflower oil, in a frying pan for two minutes on each side (or until a nice golden color appears).

3. Take out the chicken breasts and de-glaze the pan with the white wine, picking up all the crusty bits from the bottom of the pan. Reserve the liquid.

4. Chop all the vegetables in small pieces (they will cook for a long time and we want to maintain their texture) and cut your whole head of garlic in half horizontally. Place them into the slow cooker, with the herbs, salt and pepper and the wine from earlier.

5. Place lemon slices on top of the vegetables and place the chicken breast on top of the lemon.

6. Set the slow cooker to low and cook for at least 4 hours (though longer is possible, this dish will not dry out –
in fact the longer you cook it, the more juicy and moist the chicken will become). If you are short of time cook on high for 2 hours.

7. When you are ready to serve, remove the chicken from the slow cooker and allow to rest for 5 minutes.
Remove vegetables with a slotted spoon and serve on warmed plates leaving just the liquid at the bottom of the cooker.

8. Turn to high and allow the sauce to reduce for 5 minutes, or transfer to a small saucepan to speed up the process.
Adding a dash of double cream at this stage will add extra richness to the sauce. Season to taste.

9. Slice the chicken into 1/2 inc slices and serve with your tender vegetables and potatoes.


This dish works well with any part of the chicken, try it with thighs or drumsticks. If you have a large slow cooker, try using a whole chicken, instead of slicing lemons, cut them in half and shove them in the cavity.

Any part of the chicken on the bone will add and extra, richer, gelatinous texture to the sauce. It also goes well with white fish fillet such as pollock or cod and even salmon.

Carrots, onions, celery and garlic are a classic combination, but try adding fennel for an aniseed hit.

Slow Cooker Charcoal Grilled Beef Stew Recipe Slow cooker charcoal grilled beef stew is a hearty meal that will leave your taste buds tantalized and your guests and or family asking for more.

Its a traditional delicacy mainly found in the lake region of Kenya, and was prepared for honored guests visiting a home especially during weddings feasts or visits by in laws.

For the main ingredient you can use left over meat from a previous day’s grill or grill the meat during preparation time.

The grilling before cooking gives the meat a warm aromatic taste with a small hint of smoky charcoal for that authentic taste that cannot be achieved by any spice or herbs. The timing used in the slow cooker ensures that the meat cooks slowly until tender.

Another option if you don’t have a grill is to pan fry the steak with very little oil until the meat is well browned, but bear in mind that the taste won’t be the same.


  • 1 kg beef steak
  • 1 big onion finely chopped
  • 4 large tomatoes finely chopped
  • 1/2 teaspoon salt
  • 2 1/2 cups beef broth or water
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 pinch thyme
  • 1 leek finely diced
  • 4 large potatoes diced
  • 3 carrots diced
  • 1/2 cup of peas

Serves 5 – 6 people

You will also require a well lighted charcoal grill.

5 Steps to Slow Cooker Charcoal Grilled Beef Stew:

Prep time 45 minutes, cook time 5 hours

1. Cut the beef into strips lengthwise and slowly grill over a charcoal grill. Ensure to keep turning periodically so that the meat is well grilled but not burnt.

2. Once done with grilling, let the meat cool down for 5 – 10 minutes then proceed to cut the meet into cubes as per your desired size. You might prefer to leave the meat as large chunks. Put the meat in the slow cooker.

3. In a separate saucepan, lightly fry the chopped onions until golden brown, taking care not to burn them. If in doubt about achieving the golden brown switch off the heat once the onions turn colorless.

4. In the slow cooker, stir in the fried onions, finely chopped tomatoes, teaspoon of salt, 2/2 cups beef broth or water as desired, 1 bay leaf, 1 teaspoon of paprika, 1 pinch of thyme, finely diced leek, diced potatoes, peas and diced carrots.

5. Cover and cook for 5 hours on medium setting. Always ensure not to keep opening the cover when using a slow cooker so as to allow the steam to cook the meat well and keep in the aroma.

You can also add in more vegetables as required like red or yellow capsicum, red lentils and even a dash or two of chili to make it mildly hot for those who favor hot/ spicy stews. Do keep in mind whether you will be serving children before adding the chili.

Lemon Parmesan Slow Cooker Chicken Thighs/Legs

If you like chicken you are going to love this rosemary parmesan slow cooker chicken thighs/legs recipe. This recipe can be easily thrown together in only about 30 minutes, making it the perfect accompaniment to a busy night. This recipe is perfect for a family meal or gatherings with friends.


  • 8 bone-in, skin on chicken thighs or legs or both
  • 2 sliced lemons
  • 1/8 teaspoon chili powder- 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 tablespoon honey
  • 1/2 cup white wine
  • 2 tablespoons butter
  • 2 cloves garlic
  • 1 cup freshly grated parmesan (plus more for garnish)
  • Fresh rosemary sprigs for garnish

    Make the lemon parmesan slow cooker chicken thighs/legs recipe in 9 easy steps:

     1. Start by rinsing the chicken and patting them down with a paper towel.

    2. Sear the chicken thighs/legs in a frying pan over medium heat for about two to three minutes each side. Once the skin is slightly golden, transfer each piece of chicken into the slow cooker. Searing the chicken gives the skin an added texture that is missed if the chicken is directly put in the slow cooker.

    3. Mix the dry ingredients in a separate bowl.

    4. Spread half the herb mixture on the chicken, coating the entirety of both sides. The herbs will naturally stick the exterior of the chicken skin.

    5. Pour the half cup of white wine around the chicken thighs, enough so that it creates a coat of wine on the bottom of the cooker but does not submerge the chicken.     6. Sprinkle the rest of the herb mixture over the chicken, followed by the tablespoon of honey and 2 tablespoons of butter dolloped evenly over the chicken.

    7. Mince the garlic and sprinkle the minced cloves over the chicken as well. Add lemon slices.

    8. Cover and let cook for 7-8 hours on low heat. The chicken should be completely cooked through, and have an internal temperature near 165 degrees.

    9. With one hour left of cook time, lift the lid off the slow cooker and sprinkle the parmesan over the chicken. Return to heat.

    10. After the chicken is ready, remove from heat and garnish with remaining parmesan.

    The ingredients can be thrown together in the morning and then at night, a wholesome and hearty meal is ready and waiting. The recipe can be modified to include basil which will yield a milder and more Italian flavor. You could also substitute the chicken thighs for chicken breast or a whole chicken cut into pieces.

    Additionally, for a stronger dish, opt for feta cheese instead of parmesan, and add diced artichoke hearts, tomatoes, and (if preferred) kalamata olives into the slow cooker. You could also transfer the chicken to an oven dish to gratin the cheese.
